  • 120-150 g honey, agave syrup, or date syrup Adjust sweetness to taste.
  • 1 teaspoon ground cinnamon For added warmth in flavor.
  • 1 teaspoon baking powder Helps the pastel rise.
  • a pinch salt Enhances the overall flavor.
  • Chopped nuts or almonds (optional) For added texture.
  • Raisins or dried blueberries (optional) For additional sweetness.

Method
 

Preparation
  1. Preheat the oven to 180 °C (350 °F) and lightly grease your baking pan.
  2. If using oat flakes instead of oat flour, grind them until they reach a fine texture.
  3. In a large bowl, whisk together the eggs, sweetener, and oil until smooth and creamy.
  4. Pour in the fresh orange juice and zest, stirring well to combine.
  5. Fold in the freshly grated carrots gently.
Mixing
  1. Incorporate the oat flour, ground cinnamon, baking powder, and a pinch of salt.
  2. Stir just until everything is combined, avoiding over-mixing.
  3. Optional: Fold in chopped nuts or dried fruit for added flavor and texture.
Baking
  1. Pour the batter into the prepared pan and bake for 40-45 minutes.
  2. Check for doneness by inserting a toothpick into the center; it should come out clean.
  3. Allow to rest for about 10 minutes before removing from pan, and let it cool completely for best texture.

Notes

This pastel can be enjoyed on its own or dressed up with a dollop of natural yogurt. For an extra touch of flavor, consider adding more spices like nutmeg or ginger.
