  • 1 1/4 cups milk of choice (almond, oat, or dairy) Use full-flavored milk for creaminess.
  • 1/4 cup chia seeds Chia seeds will thicken the pudding.
  • 1 unit lemon (zest) Zest before juicing for maximum flavor.
  • 2-3 tbsp fresh lemon juice Adjust to taste for brightness.
  • 1-2 tbsp maple syrup or honey Sweeten to taste.
  • optional vanilla extract or extra lemon zest for topping Choose based on preference.

Preparation
  1. In a bowl or jar, whisk together milk, lemon juice, lemon zest, and sweetener.
  2. Stir in chia seeds until evenly combined.
  3. Let sit for 10 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 2 hours or overnight until thick and creamy.
  5. Stir before serving and add extra lemon zest if desired.

Notes

Keep covered in the refrigerator for up to 4–5 days. Stackable glass jars are ideal for storage.
