Preparation
- Preheat the oven to 180 degrees C (350 degrees F) and grease a cake pan.
- In a large bowl, combine the oats, grated apples, and carrots.
- In another bowl, beat the eggs, then add the melted coconut oil and honey (or agave). Mix until smooth.
Mixing
- Pour the liquid mixture over the dry ingredients.
- Add the cinnamon, baking powder, and salt. Stir until uniform.
Baking
- Pour the dough into the prepared pan and smooth the surface.
- Bake for 30-35 minutes, or until a skewer inserted comes out clean.
Cooling and Serving
- Let the cake cool a little before unmolding.
- If desired, sprinkle with walnuts and serve slices warm.
Notes
To enhance moisture, consider adding grated apple on top before baking. For storage, wrap the cake in parchment and store in an airtight container for 2-3 days at room temperature or refrigerate for up to a week.
