  • 2 cups cherry tomatoes Can add a pinch of sugar if not ripe.
  • 3 cloves garlic, minced Sauté until fragrant.
  • 1 tablespoon olive oil Use the best quality for flavor.
  • to taste Salt and pepper Season to your liking.
  • to taste Fresh basil for garnish Scatter over the top before serving.
  • pasta of choice e.g., spaghetti or penne To serve underneath the vegetable mixture.

Method
 

Preparation
  1. Spiralize the zucchinis into noodles or cut them into thin strips.
  2. In a large skillet, heat olive oil over medium heat and sauté the garlic until fragrant.
Cooking
  1. Add the cherry tomatoes and cook until they start to burst.
  2. Stir in the zucchini noodles and cook for 2-3 minutes until slightly tender.
  3. Season with salt and pepper.
  4. Serve over cooked pasta and garnish with fresh basil.

Notes

Leftovers keep well in an airtight container for up to 3 days. Reheat gently on the stove with a splash of water or olive oil. Don’t overcook the zucchini to avoid mushiness. For added flavor, consider adding red pepper flakes or proteins like shrimp or chicken.
