Ingredients
  

Dough Base
  • 2 cups flour
  • 2 tsp baking powder
  • Pinch N/A salt
  • 125 g butter Softened
  • 1/2 cup sugar
  • 1 N/A egg
Filling and Topping
  • Apricot N/A jam To fill the dough cups
  • 2 N/A egg whites
  • 1/2 cup sugar For meringue
  • 1 cup desiccated coconut
  • Few drops N/A vanilla essence

Method
 

Preparation
  1. Cream the butter and sugar together until light and fluffy.
  2. Mix in the egg until combined.
  3. Fold in flour, baking powder, and salt to form a dough.
  4. Press the dough into greased tart pans or muffin trays.
  5. Spoon apricot jam into the center of each dough cup.
Meringue Topping
  1. Beat the egg whites until foamy, then gradually add sugar until fluffy.
  2. Fold in the coconut and vanilla essence.
  3. Spoon the coconut mixture over the jam in each cup.
Baking
  1. Bake in a preheated oven at 180°C for 20-25 minutes until golden.

Notes

For an enriched experience, consider using homemade apricot jam. The meringue can be tinted with food coloring for variations. Pair Hertzoggies with fresh whipped cream for decadence.
