Preparation
- In a large bowl, crack the eggs and whisk them together with the sugar for a few minutes until the mixture turns light and frothy.
- Stir in the neutral oil, milk, anise liqueur (or orange juice), citrus zest, vanilla extract, and a pinch of salt. Mix until all the ingredients are harmoniously combined.
- Gradually add the baking powder and gently incorporate the flour little by little until a soft dough forms. Knead the dough gently until it’s smooth, then let it rest for 15-20 minutes.
- Roll the rested dough into thin cylinders and join the ends to form rings.
Cooking
- Heat oil in a large pot over medium heat, then fry the donuts in batches until they turn a beautiful golden brown.
- Remove the donuts and let them drain on paper towels. While they’re warm, coat them in sugar.
Notes
Serve warm or at room temperature, pairing with coffee, milk, or homemade lemon curd. Store leftovers in an airtight container at room temperature for up to 2 days or freeze for longer storage.
