Preparation
- In a saucepan, combine sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth.
- Place the saucepan over medium heat, stirring continuously until thickened.
- Reduce heat, and add lemon juice, lemon zest, and egg yolks, whisking until combined.
- Remove from heat and stir in the vanilla extract.
Cooling
- Pour the custard into serving dishes and refrigerate until set.
Notes
For garnishing, consider a sprig of mint, a sprinkle of zest, or a dollop of whipped cream.
