Preparation
  1. In a saucepan, combine sugar, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth.
  3. Place the saucepan over medium heat, stirring continuously until thickened.
  4. Reduce heat, and add lemon juice, lemon zest, and egg yolks, whisking until combined.
  5. Remove from heat and stir in the vanilla extract.
Cooling
  1. Pour the custard into serving dishes and refrigerate until set.
