Ingredients
  

For the dip
  • 8 ounces lean ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 8 ounces cubed Velveeta cheese
  • 6 ounces block smoked Gouda cheese
  • 8 ounces cream cheese
  • 1 large jalapeño, chopped and seeded for less spice
  • 1/4 cup chopped cilantro
  • 1/2 cup red onion, finely diced
  • 14 ounces diced tomatoes with chilis, such as Rotel
  • 6 ounces evaporated milk

Method
 

Preparation
  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a sturdy pan, cook the lean ground beef over medium-high heat until browned. Drain excess fat.
  3. Season the beef with salt and pepper, then add minced garlic, paprika, and oregano. Cook for 2-3 minutes.
  4. In a 13 x 9 baking dish, layer the Velveeta, Gouda, and cream cheese.
  5. Add the cooked ground beef, followed by jalapeño, cilantro, red onion, and diced tomatoes.
  6. Drizzle evaporated milk over the top.
Baking
  1. Bake uncovered for 25-30 minutes.
  2. Stir to combine the melted ingredients. Adjust texture with additional evaporated milk as desired.
Serving
  1. Garnish with fresh scallions or a dollop of sour cream. Serve with crunchy tortilla chips.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave with a touch of evaporated milk.
