- Preheat the oven to 375 degrees Fahrenheit.
- In a sturdy pan, cook the lean ground beef over medium-high heat until browned. Drain excess fat.
- Season the beef with salt and pepper, then add minced garlic, paprika, and oregano. Cook for 2-3 minutes.
- In a 13 x 9 baking dish, layer the Velveeta, Gouda, and cream cheese.
- Add the cooked ground beef, followed by jalapeño, cilantro, red onion, and diced tomatoes.
- Drizzle evaporated milk over the top.
Baking
- Bake uncovered for 25-30 minutes.
- Stir to combine the melted ingredients. Adjust texture with additional evaporated milk as desired.
Serving
- Garnish with fresh scallions or a dollop of sour cream. Serve with crunchy tortilla chips.
