Method
 

Preparing the Dough
  1. In a small bowl, combine the warm water and sugar. Sprinkle the active dry yeast over the top, then let it sit for about 5–10 minutes until it's frothy.
  2. In a large mixing bowl, whisk together the flour, salt, and garlic salt.
  3. Once the yeast is activated, add the melted butter and egg yolk to the flour mixture. Pour in the yeast mixture and stir until a dough forms.
  4. Knead for about 5 minutes on a floured surface until it's smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about an hour or until doubled in size.
Baking the Cheese Sticks
  1. Preheat your oven to 425°F (220°C).
  2. Once risen, roll the dough into a rectangle about 1/2 inch thick. Cut into strips and place them on a greased baking sheet.
  3. Sprinkle the shredded mozzarella and Parmesan cheese over the top.
  4. Bake for about 15–20 minutes or until golden brown and the cheese is bubbling.
  5. Serve hot with your favorite marinara sauce for dipping!

Notes

For added richness, brush the cheese sticks with a bit of melted garlic butter right before baking. Feel free to experiment with your favorite cheese blends; a bit of cheddar or pepper jack can add a nice twist!
