Preparation
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine the graham cracker crumbs with melted butter until they resemble damp sand. Press this mixture into the bottom of a springform pan.
- Bake the crust for 10 minutes until lightly golden.
Cheesecake Filling
- Beat together the cream cheese and sugar until smooth.
- Incorporate the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Pour the cheesecake filling over the cooled crust.
Baking
- Bake the cheesecake for 50-55 minutes, or until the center is slightly set.
- Allow the cheesecake to cool completely and then refrigerate for at least 4 hours.
Topping
- Toss the sliced strawberries with strawberry jam.
- Once the cheesecake is chilled, spread the glazed strawberries on top and pipe whipped cream around the edges.
Notes
For variations, try using different fruits or adding lemon zest to the filling. This cheesecake can also be frozen for later enjoyment.
