Ingredients
  

Brownie Base
  • 1 cup unsalted butter Melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs Beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Sifted
  • 1/2 cup cocoa powder Sifted
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup dark chocolate chips
Cherry Ingredients
  • 1 cup fresh cherries Pitted and halved
  • 1 cup cherry preserves

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper.
  2. In a large saucepan, melt the butter over medium heat. Remove from heat and stir in granulated sugar and brown sugar until smooth.
  3. Beat in the eggs one at a time, then add vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually mix this into the butter mixture until just blended.
  5. Fold in dark chocolate chips and fresh cherries.
Baking
  1. Spread half the batter into the prepared baking pan. Spoon cherry preserves over the batter and spread evenly.
  2. Cover with the remaining batter and smooth it out.
  3. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let cool in the pan before cutting into squares.
  5. Drizzle with cherry preserves and sprinkle with additional fresh cherries before serving.

Notes

These brownies pair wonderfully with vanilla ice cream or a hot cup of coffee. Store in an airtight container for up to five days.
