Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper.
- In a large saucepan, melt the butter over medium heat. Remove from heat and stir in granulated sugar and brown sugar until smooth.
- Beat in the eggs one at a time, then add vanilla extract.
- In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually mix this into the butter mixture until just blended.
- Fold in dark chocolate chips and fresh cherries.
Baking
- Spread half the batter into the prepared baking pan. Spoon cherry preserves over the batter and spread evenly.
- Cover with the remaining batter and smooth it out.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan before cutting into squares.
- Drizzle with cherry preserves and sprinkle with additional fresh cherries before serving.
Notes
These brownies pair wonderfully with vanilla ice cream or a hot cup of coffee. Store in an airtight container for up to five days.
