  • 1.5 cups blanched almond flour
  • 0.25 cups coconut flour
  • 0.5 cups powdered sugar-free sweetener
  • 0.75 tsp baking powder
  • 0.25 tsp salt
  • 6 tbsp unsalted butter (softened)
  • 2 large eggs
  • 0.5 tsp vanilla extract
Frosting Ingredients
  • 0.25 cups unsalted or salted butter (softened)
  • 0.5 cups powdered sugar-free sweetener
  • 0.125 tsp natural pink food coloring powder (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a large bowl, combine the almond flour, coconut flour, powdered sweetener, baking powder, and salt.
  3. Add the softened butter, eggs, and vanilla extract to the bowl. Stir until a dough forms.
  4. Form the dough into 12 balls and place them on the cookie sheet, smoothing and flattening each ball.
Baking
  1. Bake the cookies for 8-10 minutes until lightly golden.
  2. Allow them to cool on a wire rack.
Frosting
  1. Beat together the softened butter and powdered sweetener until silky smooth.
  2. Add food coloring if desired and spread the frosting over cooled cookies.

Notes

Store cookies in an airtight container for up to a week, or freeze for up to three months. Separate layers with parchment paper to prevent sticking. For extra flavor, try adding almond or lemon extracts.
