  • 8 slices provolone cheese Can substitute with mozzarella or gouda.
  • 1 medium green bell pepper, julienned
  • 1 small yellow onion, thinly sliced
  • 1 tablespoon olive oil For sautéing vegetables.
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper

Preparation
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the julienned bell peppers and sliced onions. Stir gently for 8 to 10 minutes until they caramelize.
  3. Season with garlic powder, sea salt, and cracked black pepper. Remove from heat.
  4. Preheat the oven broiler and line a baking sheet with parchment paper.
  5. Lay out the roast beef slices and cover each with provolone cheese.
  6. Distribute the sautéed peppers and onions evenly over the beef.
  7. Roll the beef tightly around the fillings, placing them seam-side down on the baking sheet.
  8. Broil for 1 to 2 minutes until the cheese bubbles and turns golden.

  1. Serve warm, ideally with a side salad or crunchy vegetables.
Storage
  1. Store any remaining roll-ups in an airtight container in the refrigerator for up to three days. Reheat gently in the oven.
