Ingredients
  

For the dip
  • 8 oz cream cheese, softened at room temperature Room temperature cream cheese mixes smoother.
  • 1/2 cup sugar Adjust to taste.
  • 3 tablespoons lime juice (from 2 small limes or 3 key limes)
  • Zest of 2 small limes Lime zest
  • 1 pinch vanilla bean powder
  • 1 pinch salt Optional
  • 1/4 cup heavy whipping cream
For dipping
  • Graham crackers, cookies, and/or fruit For serving.

Method
 

Preparation
  1. Cream together the cream cheese, sugar, lime juice, lime zest, vanilla bean powder, and salt using a stand-up mixer for 1-2 minutes.
  2. Taste and see if it needs more sugar or more lime juice.
  3. Add the whipping cream and mix on medium speed until fully incorporated.
  4. Serve immediately or chill before serving.
Serving
  1. Spoon the dip into a bowl and arrange assorted dippers around it.

Notes

Keep any leftovers covered in an airtight container in the refrigerator for up to 4 days. Stir before serving again; add a spoonful of cream if it firms up.
