Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar Optional: adjust for taste
  • 1/2 cup unsalted butter, melted
Filling
  • 2 cups sweetened condensed milk
  • 1/2 cup key lime juice Freshly squeezed preferred
  • 3 large egg yolks
Toppings
  • to taste Whipped cream For topping
  • as needed Lime slices For garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini dessert cups or a greased muffin tin.
Filling
  1. In another bowl, mix sweetened condensed milk, key lime juice, and egg yolks until smooth.
  2. Pour the filling over the crust in the dessert cups.
Baking
  1. Bake for about 15 minutes or until set.
Cooling & Serving
  1. Allow to cool, then refrigerate for at least 2 hours.
  2. Serve topped with whipped cream and lime slices.

Notes

For best flavor, use fresh key lime juice. These mini desserts can be made a day in advance. Store any leftovers in an airtight container for up to 3 days.
