Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of mini dessert cups or a greased muffin tin.
Filling
- In another bowl, mix sweetened condensed milk, key lime juice, and egg yolks until smooth.
- Pour the filling over the crust in the dessert cups.
Baking
- Bake for about 15 minutes or until set.
Cooling & Serving
- Allow to cool, then refrigerate for at least 2 hours.
- Serve topped with whipped cream and lime slices.
Notes
For best flavor, use fresh key lime juice. These mini desserts can be made a day in advance. Store any leftovers in an airtight container for up to 3 days.
