Preparation
- Mix together the cold butter, cream cheese, and vanilla extract in a stand mixer until well combined.
- Gradually incorporate the flour until a cohesive dough forms. Wrap in plastic wrap and chill in the refrigerator for 1 hour.
- Preheat your oven to 375°F (190°C) and line a cookie sheet with parchment paper or grease lightly.
- Roll out the chilled dough on a lightly floured surface until it's approximately 1/8" thick.
Assembling and Baking
- Cut the dough into squares and place a small amount of fruit filling in the center of each square.
- Bring two opposite corners of the square to the center and overlap slightly, adding a touch more filling if desired.
- Place on the prepared cookie sheet and bake for 12 to 15 minutes, monitoring for any filling leaks.
- Allow the cookies to cool on a rack before dusting with powdered sugar.
Notes
Serve warm with tea or coffee. Store in an airtight container at room temperature for up to a week or freeze for up to three months, separated with parchment paper to prevent sticking.
