Ingredients
  

Dough Ingredients
  • 8 oz Cream Cheese Ensure it's softened for easier mixing.
  • 1 cup Cold Butter Keep the butter cold for flaky texture.
  • 2 cups All-Purpose Flour Sifted for better incorporation.
  • 1 tsp Pure Vanilla Extract
Filling and Topping
  • 12 oz Can of Fruit Pie Filling (Apricot, Raspberry, Cherry, etc.) Blend smooth if chunky.
  • Confectioners' Sugar For dusting on top.

Method
 

Preparation
  1. Mix together the cold butter, cream cheese, and vanilla extract in a stand mixer until well combined.
  2. Gradually incorporate the flour until a cohesive dough forms. Wrap in plastic wrap and chill in the refrigerator for 1 hour.
  3. Preheat your oven to 375°F (190°C) and line a cookie sheet with parchment paper or grease lightly.
  4. Roll out the chilled dough on a lightly floured surface until it's approximately 1/8" thick.
Assembling and Baking
  1. Cut the dough into squares and place a small amount of fruit filling in the center of each square.
  2. Bring two opposite corners of the square to the center and overlap slightly, adding a touch more filling if desired.
  3. Place on the prepared cookie sheet and bake for 12 to 15 minutes, monitoring for any filling leaks.
  4. Allow the cookies to cool on a rack before dusting with powdered sugar.

Notes

Serve warm with tea or coffee. Store in an airtight container at room temperature for up to a week or freeze for up to three months, separated with parchment paper to prevent sticking.
