Preparation
- In a stand mixer, mix together the cold butter, cream cheese, and vanilla until creamy.
- Gradually add in the flour, mixing until a smooth dough forms.
- Chill the dough in the refrigerator for an hour.
Baking
- Preheat your oven to 375°F and line a cookie sheet with parchment paper or lightly grease it.
- Roll out the chilled dough on a lightly floured surface to about 1/8" thick.
- Cut squares from the dough using a pastry cutter.
- Add a small amount of your chosen filling to the center of each square.
- Bring the two opposite corners of each square to the center, overlapping them, with a bit of filling to help them stick.
- Place the cookies on the prepared sheet and bake for 12-15 minutes.
- Halfway through baking, gently press any opened corners back into place.
- Once golden, let cookies cool on a wire rack and sprinkle with powdered sugar before serving.
Notes
Best served warm or at room temperature. Store in an airtight container for 3-5 days. Experiment with various fruit fillings and flavors like chocolate ganache or lemon curd.
