Ingredients
  

Dough
  • 8 oz Cream Cheese Make sure it's softened.
  • 1 cup Cold Butter Use ice-cold butter for a flakier texture.
  • 2 cups All-Purpose Flour Gradually add into the mixture.
  • 1 tsp Pure Vanilla Extract Adds flavor to the dough.
Filling
  • 12 oz Can of Fruit Pie Filling (Apricot, Raspberry, Cherry, etc.) Blend smooth if it's chunky.
  • Confectioners' Sugar For topping before serving.

Method
 

Preparation
  1. In a stand mixer, mix together the cold butter, cream cheese, and vanilla until creamy.
  2. Gradually add in the flour, mixing until a smooth dough forms.
  3. Chill the dough in the refrigerator for an hour.
Baking
  1. Preheat your oven to 375°F and line a cookie sheet with parchment paper or lightly grease it.
  2. Roll out the chilled dough on a lightly floured surface to about 1/8" thick.
  3. Cut squares from the dough using a pastry cutter.
  4. Add a small amount of your chosen filling to the center of each square.
  5. Bring the two opposite corners of each square to the center, overlapping them, with a bit of filling to help them stick.
  6. Place the cookies on the prepared sheet and bake for 12-15 minutes.
  7. Halfway through baking, gently press any opened corners back into place.
  8. Once golden, let cookies cool on a wire rack and sprinkle with powdered sugar before serving.

Notes

Best served warm or at room temperature. Store in an airtight container for 3-5 days. Experiment with various fruit fillings and flavors like chocolate ganache or lemon curd.
