  • 1 cup unsalted butter, softened Should be at room temperature for optimal creaminess.
  • 1/4 cup powdered sugar Plus extra for dusting.
  • 1/4 cup cornstarch Can be substituted with arrowroot powder.
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon fresh lemon juice For an extra lemony punch, add an additional teaspoon.
  • Zest of 1 lemon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Gradually add the cornstarch, all-purpose flour, lemon zest, lemon juice, vanilla extract, and salt. Mix until a soft dough forms.
  4. Roll the dough into small balls, about 1 inch in diameter, and place on the baking sheet. Flatten each ball gently.
Baking
  1. Bake in the preheated oven for 10-12 minutes, until edges are lightly golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
  3. Once cooled, dust generously with powdered sugar.

Notes

Store in an airtight container at room temperature for up to a week. Can be frozen if well-wrapped.
