Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and powdered sugar until light and fluffy.
- Gradually add the cornstarch, all-purpose flour, lemon zest, lemon juice, vanilla extract, and salt. Mix until a soft dough forms.
- Roll the dough into small balls, about 1 inch in diameter, and place on the baking sheet. Flatten each ball gently.
Baking
- Bake in the preheated oven for 10-12 minutes, until edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
- Once cooled, dust generously with powdered sugar.
Notes
Store in an airtight container at room temperature for up to a week. Can be frozen if well-wrapped.
