Ingredients
  

Dry Ingredients
  • 2 cups flour Measure flour by spooning into the cup and leveling for the lightest crumb.
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon poppy seeds Toast in a dry skillet for a minute to deepen their nuttiness.
Wet Ingredients
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 large eggs
  • 3/4 cup melted butter Can substitute neutral oil for a lighter crumb.
  • 1 tablespoon lemon juice
  • 1 cup sugar Divided into two amounts; first in batter, second in glaze.
  • 1 cup milk Can substitute with plain Greek yogurt for a denser crumb.
  • 1/4 cup lemon juice
  • 1/2 cup sugar Used in the glaze.
  • 1 teaspoon vanilla extract Used in the glaze.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and grease one large loaf pan or four mini loaf pans.
  2. In a medium bowl, combine the dry ingredients: flour, salt, baking powder, and poppy seeds.
  3. In another bowl, mix the wet ingredients: vanilla extract, almond extract, eggs, melted butter, lemon juice, sugar, and milk.
  4. Mix the wet and dry ingredients until combined and pour evenly into the greased loaf pan(s).
Baking
  1. Bake in preheated oven for about 45 minutes if using small pans, or 60 minutes if using large pans.
Glazing
  1. When the bread is about 5-10 minutes from being done, prepare the glaze by heating the lemon juice, sugar, and vanilla over medium heat in a saucepan.
  2. Once the sugar is completely melted, remove from heat.
  3. Remove the pans from the oven and poke several holes into the bread using a fork.
  4. Pour the glaze carefully on top of the bread to allow it to seep into the fork holes.
Cooling
  1. Allow the bread to cool for at least 20 minutes prior to serving.

Notes

Slice while slightly warm and serve with butter or mascarpone. Garnish with lemon zest ribbons for a celebratory touch.
