Ingredients
  

For the treat mixture
  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 3 cups mini marshmallows (half lemon-flavored, half classic white) For enhanced flavor, mix lemon-flavored marshmallows.
  • 1 zest of 1 lemon Plus more for garnish if desired.
  • 1/2 teaspoon lemon extract Optional, for added citrus flavor.
For the topping
  • 1/2 cup white chocolate chips or melting wafers Use melted chocolate to drizzle over the treats.
  • Lemon peel or zest For garnish.

Method
 

Preparation
  1. Grease a 9x9-inch baking pan.
  2. In a large saucepan, melt the unsalted butter over low heat.
  3. Once melted, add in the mini marshmallows and stir until melted and smooth.
  4. Stir in the lemon zest and lemon extract, mixing until well combined.
  5. Remove from heat and fold in the Rice Krispies cereal until coated.
  6. Press the mixture evenly into the greased pan, allowing a hint of softness for chewiness.
Topping
  1. Melt white chocolate chips in the microwave, stirring in intervals until silky smooth.
  2. Drizzle the melted white chocolate over the treats.
  3. Sprinkle additional lemon zest or curls of lemon peel on top.
Cooling and Serving
  1. Let the treats cool for 30 minutes in the pan.
  2. Cut into squares and serve on a platter.

Notes

Store treats in an airtight container for several days. Can also be wrapped in wax paper. Experiment with lemon zest and extract to suit your taste.
