Preparation
- Grease a 9x9-inch baking pan.
- In a large saucepan, melt the unsalted butter over low heat.
- Once melted, add in the mini marshmallows and stir until melted and smooth.
- Stir in the lemon zest and lemon extract, mixing until well combined.
- Remove from heat and fold in the Rice Krispies cereal until coated.
- Press the mixture evenly into the greased pan, allowing a hint of softness for chewiness.
Topping
- Melt white chocolate chips in the microwave, stirring in intervals until silky smooth.
- Drizzle the melted white chocolate over the treats.
- Sprinkle additional lemon zest or curls of lemon peel on top.
Cooling and Serving
- Let the treats cool for 30 minutes in the pan.
- Cut into squares and serve on a platter.
Notes
Store treats in an airtight container for several days. Can also be wrapped in wax paper. Experiment with lemon zest and extract to suit your taste.
