Preparation
  1. Begin by preparing your ice cream machine.
  2. In a saucepan, combine the water and sugar, bringing them to a gentle simmer over medium heat until the sugar has dissolved.
  3. Allow the mixture to cool, then refrigerate until chilled.
Mixing
  1. Once the mixture is cold, combine it with the lemon juice, lemon zest, and optional vodka in your ice cream maker.
  2. Churn the mixture for 15 minutes until it reaches a slushy consistency.
Serving or Freezing
  1. Serve immediately in chilled bowls or transfer it to a container to freeze for an hour to thicken.
  2. Stir occasionally until it reaches the desired texture.

Notes

For a smoother texture, strain the lemon juice to remove pulp. Fresh lemons yield the best flavor. Store any leftovers in an airtight container in the freezer for up to a week. Remember to soften slightly before serving.
