  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
For the Lemon Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice Additional for glaze.
  • 1 teaspoon lemon zest

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg, followed by the lemon juice, lemon zest, and vanilla extract until well combined.
Mixing Dough
  1. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. Gradually mix the dry ingredients into the buttery mixture, stirring until a smooth dough is formed.
Shaping and Baking
  1. Scoop tablespoon-sized portions of dough and roll them into balls.
  2. Place the balls on the prepared baking sheet with enough space between them.
  3. Bake for 10-12 minutes or until the edges are golden.

  1. In a small bowl, blend the powdered sugar, lemon juice, and lemon zest until smooth.
