Ingredients

For the base mixture
  • ½ cup salted butter
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon espresso powder
  • 14 oz. sweetened condensed milk
  • 20 pieces soft caramels (Werther’s)
  • 1 teaspoon vanilla extract
For the mix-ins
  • 5 ½ cups mini marshmallows (about 1 10 oz. bag)
  • 5 cups Rice Krispy cereal

Method

Preparation
  1. In a large pot, combine the butter, cocoa powder, and espresso powder. Melt over medium-low heat, stirring occasionally until it transforms into a silky mixture.
  2. Whisk in the sweetened condensed milk until effortlessly combined with the chocolate mixture.
  3. Add in the caramel candies and stir continuously until they melt completely, creating an irresistibly smooth concoction.
  4. Toss in the mini marshmallows and mix until they become a melted, gooey delight.
  5. Remove the pot from heat and promptly stir in the vanilla extract for that extra warmth.
  6. Gently fold in the Rice Krispy cereal until each flake is generously coated in your luscious chocolate mix.
Setting the treats
  1. Line two baking pans with parchment paper and use a large cookie scoop to drop generous mounds of the mixture onto the parchment.
  2. Pop the trays in the refrigerator, allowing the treats to set for 30 minutes to an hour.

Notes

For serving, enjoy them as a sweet surprise at a party, pack them for a picnic, or indulge at home with a glass of cold milk. Store these treats in an airtight container at room temperature for up to three days. For a firmer texture, keep them in the fridge but let them sit at room temperature before serving.
