  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed For a flaky texture
  • 1 cup shredded cheddar cheese
  • 3/4 cup milk
Lobster Filling Ingredients
  • 1 cup cooked lobster meat, chopped
  • 1/4 cup green onions, chopped
  • 1 tablespoon lemon juice
  • 1/4 cup mayonnaise
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in the cheddar cheese, then gently add the milk, mixing until a pliable dough forms.
  4. On a floured surface, roll out the dough to about half an inch thick and cut it into circles or squares.
Filling
  1. In a separate bowl, combine the lobster meat, green onions, lemon juice, mayonnaise, and a touch of salt and pepper.
  2. Place a spoonful of the lobster mixture onto half of the biscuit pieces. Top with the remaining pieces and seal the edges.
Baking
  1. Bake in the preheated oven for 20-25 minutes until golden brown and fragrant. Serve warm.

Notes

For lighter biscuits, mix dough carefully. Consider using Old Bay seasoning for extra flavor. Biscuits can be stored in an airtight container for up to three days.
