Ingredients
  

For the Biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed Use unsalted butter for best results.
  • 1 cup shredded cheddar cheese Feel free to experiment with different types of cheese.
  • 3/4 cup milk Whole milk preferred for creaminess.
For the Filling
  • 1 cup cooked lobster meat, chopped Freshly cooked lobster is recommended.
  • 1/4 cup green onions, chopped
  • 1 tablespoon lemon juice Fresh lemon juice enhances flavor.
  • 1/4 cup mayonnaise
  • to taste none salt and pepper Adjust seasoning according to preference.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gently stir in the cheddar cheese.
  4. Gradually add the milk, mixing until a dough forms.
  5. Transfer the dough to a floured surface and roll it out to about 1/2 inch thick. Cut into circles or squares.
Filling
  1. In another bowl, combine the lobster meat, green onions, lemon juice, mayonnaise, salt, and pepper.
  2. Place a generous spoonful of the lobster mixture on half of your biscuit pieces. Top with the remaining pieces and seal the edges.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown.

Notes

Store leftover biscuits in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore flakiness.
