Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently stir in the cheddar cheese.
- Gradually add the milk, mixing until a dough forms.
- Transfer the dough to a floured surface and roll it out to about 1/2 inch thick. Cut into circles or squares.
Filling
- In another bowl, combine the lobster meat, green onions, lemon juice, mayonnaise, salt, and pepper.
- Place a generous spoonful of the lobster mixture on half of your biscuit pieces. Top with the remaining pieces and seal the edges.
Baking
- Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown.
Notes
Store leftover biscuits in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore flakiness.
