Ingredients
  

For the base
  • 1/2 cup butter, melted
  • 1 cup light brown sugar
  • 2 large eggs, beaten, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
For topping
  • 3/4 cup flaked coconut divided; half for the base, half for topping

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (180 degrees C). Line an 8x8-inch baking dish with parchment paper and grease it.
  2. Sprinkle half of the coconut flakes at the bottom and up the sides of the dish.
Mixing
  1. Melt your butter in a small saucepan or microwave. In a large bowl, whisk together melted butter and brown sugar until well blended.
  2. Add the beaten eggs, vanilla extract, and coconut extract. Whisk until combined.
  3. Gently fold in the flour and baking powder until no dry flour remains.
Baking
  1. Pour the batter into the prepared baking dish and spread evenly.
  2. Sprinkle the remaining coconut on top and cover loosely with foil.
  3. Bake for 25 minutes, then remove the foil and bake an additional 10 to 15 minutes until the coconut is golden.
Cooling
  1. Let the bars cool for at least 15 minutes before cutting into squares.

Notes

For an extra layer of flavor, use toasted coconut. Feel free to add chocolate chips for a delicious twist.
