Preparation
- Preheat your oven to 350 degrees F (180 degrees C). Line an 8x8-inch baking dish with parchment paper and grease it.
- Sprinkle half of the coconut flakes at the bottom and up the sides of the dish.
Mixing
- Melt your butter in a small saucepan or microwave. In a large bowl, whisk together melted butter and brown sugar until well blended.
- Add the beaten eggs, vanilla extract, and coconut extract. Whisk until combined.
- Gently fold in the flour and baking powder until no dry flour remains.
Baking
- Pour the batter into the prepared baking dish and spread evenly.
- Sprinkle the remaining coconut on top and cover loosely with foil.
- Bake for 25 minutes, then remove the foil and bake an additional 10 to 15 minutes until the coconut is golden.
Cooling
- Let the bars cool for at least 15 minutes before cutting into squares.
Notes
For an extra layer of flavor, use toasted coconut. Feel free to add chocolate chips for a delicious twist.
