Main Ingredients
  • 3 pieces mangoes One for puree and two for garnish.
  • 250 g cream cheese, room temperature
  • 1/4 cup caster sugar
  • 600 ml thickened cream Divided into portions for mixing and topping.
  • 1/2 tsp vanilla essence
  • 250 g Arnott's Granita biscuits
  • 1/2 cup unsweetened orange juice For dipping biscuits.
  • 2 pieces passionfruit For garnish.
  • 1 punnet fresh raspberries For garnish.

Method
 

Preparation
  1. Slice the cheeks off one mango and spoon the flesh into a food processor. Blitz it until smooth and set aside.
  2. Wipe out the food processor bowl and add cream cheese, caster sugar, and 1/2 cup of thickened cream. Blitz until smooth and well-combined.
  3. Transfer the mixture to a bowl and gently fold in the mango puree.
  4. In another bowl, whisk the remaining thickened cream with vanilla essence until it holds soft peaks.
Assembly
  1. Spread a long, thick rectangle of whipped cream onto your serving platter.
  2. Dip each Granita biscuit in orange juice, then spread a layer of the cream cheese mixture on each and place them upright at one end of the whipped cream.
  3. Continue the process until the log shape is formed.
  4. Cover the log with the remaining whipped cream and chill in the fridge for at least 2 hours or overnight.
Serving
  1. When ready to serve, slice the remaining mangoes and use them to adorn the log. Add fresh raspberries for color.

Notes

For extra crunch, consider adding crushed nuts on top before serving. If mangoes aren’t in season, substitute with another fruit. This log is best served chilled and makes a perfect dessert at gatherings.
