  • 1/2 cup freshly squeezed lemon juice
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/2 cup self-rising flour
  • 1 teaspoon vanilla extract
  • 1 zest of lemon Zest enhances the flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the sweetened condensed milk, lemon juice, eggs, melted butter, self-rising flour, vanilla extract, and lemon zest until smooth.
  3. Carefully pour this mixture into tart shells, filling them about three-quarters full.
Baking
  1. Bake in the preheated oven for about 20-25 minutes or until the edges are set and the center presents a delightful jiggle.
  2. Allow to cool before serving.

Notes

These tarts can be served plain or with a dollop of whipped cream. Garnish with a sprinkle of lemon zest or fresh berries for an elegant touch.
