For Mini Pumpkin Cheesecakes
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs with melted butter until combined. Press this mixture into the bottom of mini muffin tins to form the crusts.
- In another bowl, beat softened cream cheese with sugar until smooth. Add the eggs, vanilla, pumpkin puree, and pumpkin spice, and mix well.
- Pour the cream cheese mixture into the crusts in the muffin tins.
- Bake for 20-25 minutes or until set. Let cool before serving.
For Bite-Sized Apple Tarts
- Preheat the oven to 375°F (190°C).
- Roll out the pastry dough and cut it into circles that fit into a muffin tin.
- Place the dough circles into the muffin tin.
- In another bowl, toss the diced apples with brown sugar and cinnamon.
- Fill each pastry cup with the apple mixture and bake for 15-20 minutes, or until golden brown. Let cool before serving.
Notes
These desserts can be served on a platter for a lovely presentation. Sprinkle powdered sugar on top of the cheesecakes for added flair. Enjoy the apple tarts with a scoop of vanilla ice cream if desired. Both desserts can be made a day in advance.
