Ingredients
  

For the Mini Pumpkin Cheesecakes
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened Ensure it is at room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 can pumpkin puree
  • 1 teaspoon pumpkin spice Add more for a deeper flavor
For the Bite-Sized Apple Tarts
  • 2 cups apple, diced Fresh apples recommended for more flavor
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 package store-bought pastry dough Ensure it is rolled out evenly

Method
 

For Mini Pumpkin Cheesecakes
  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs with melted butter until combined. Press this mixture into the bottom of mini muffin tins to form the crusts.
  3. In another bowl, beat softened cream cheese with sugar until smooth. Add the eggs, vanilla, pumpkin puree, and pumpkin spice, and mix well.
  4. Pour the cream cheese mixture into the crusts in the muffin tins.
  5. Bake for 20-25 minutes or until set. Let cool before serving.
For Bite-Sized Apple Tarts
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pastry dough and cut it into circles that fit into a muffin tin.
  3. Place the dough circles into the muffin tin.
  4. In another bowl, toss the diced apples with brown sugar and cinnamon.
  5. Fill each pastry cup with the apple mixture and bake for 15-20 minutes, or until golden brown. Let cool before serving.

Notes

These desserts can be served on a platter for a lovely presentation. Sprinkle powdered sugar on top of the cheesecakes for added flair. Enjoy the apple tarts with a scoop of vanilla ice cream if desired. Both desserts can be made a day in advance.
