Mixed Berry Tart

Ingredients
  

For the crust
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 1 to 2 tbsp cold water
For the filling
  • 1 1/2 cups whole milk
  • 1/3 cup granulated sugar
  • 3 large egg yolks
  • 2 tbsp cornstarch
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
For the topping
  • 1 cup strawberries, sliced
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 1/4 cup berry preserves (for glaze)
  • 1 tbsp lemon juice

Method
 

Preparation of the Crust
  1. In a bowl, mix the flour and powdered sugar.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add the egg yolk and just enough cold water to bring the dough together.
  4. Wrap the dough and chill in the fridge for 30 minutes.
  5. After chilling, roll out and press into a 9-inch tart pan.
  6. Prick the base with a fork.
  7. Bake the crust at 350°F for 15-18 minutes until golden.
  8. Allow it to cool completely.
Preparation of the Filling & Topping
  1. Whisk together the milk, granulated sugar, egg yolks, and cornstarch in a saucepan over medium heat.
  2. Stir until thick and creamy.
  3. Remove from heat and stir in the butter and vanilla.
  4. Let the filling cool slightly before spreading it over the crust.
  5. Arrange the fresh berries on top.
  6. Warm the berry preserves slightly with the lemon juice and brush over the fruit.
  7. Chill the tart for at least 2 hours before serving.

Notes

Ensure the butter is cold for a flaky crust. Berries can be mixed or substituted as desired.
