Method
Preparation of the Crust
- In a bowl, mix the flour and powdered sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the egg yolk and just enough cold water to bring the dough together.
- Wrap the dough and chill in the fridge for 30 minutes.
- After chilling, roll out and press into a 9-inch tart pan.
- Prick the base with a fork.
- Bake the crust at 350°F for 15-18 minutes until golden.
- Allow it to cool completely.
Preparation of the Filling & Topping
- Whisk together the milk, granulated sugar, egg yolks, and cornstarch in a saucepan over medium heat.
- Stir until thick and creamy.
- Remove from heat and stir in the butter and vanilla.
- Let the filling cool slightly before spreading it over the crust.
- Arrange the fresh berries on top.
- Warm the berry preserves slightly with the lemon juice and brush over the fruit.
- Chill the tart for at least 2 hours before serving.
Notes
Ensure the butter is cold for a flaky crust. Berries can be mixed or substituted as desired.
