Ingredients
  

Pudding Ingredients
  • 2 cups Sunbeam Gourmet Selection mixed fruit Use a mix of dried or fresh fruits.
  • 3/4 cup boiling water
  • 1/2 teaspoon bicarbonate of soda
  • 60 grams butter (for mixing)
  • 1/2 cup lightly packed brown sugar
  • 2 pieces eggs
  • 1 1/2 cups self-raising flour You can substitute with all-purpose flour and baking powder.
Sauce Ingredients
  • 50 grams butter (for the sauce)
  • 1/2 cup brown sugar (for the sauce)
  • 300 ml thickened cream
  • to taste Caramel sauce To serve.

Method
 

Preparation
  1. Preheat your oven to 160 degrees C and grease 8 mini pudding moulds, lining the bottoms with baking paper.
  2. In a bowl, combine half of the mixed fruit with boiling water and bicarbonate of soda. Let it soak for about 10 minutes.
  3. Blend the soaked mixture with butter, brown sugar, eggs, and self-raising flour until combined.
  4. Gently fold in the remaining mixed fruit and spoon the mixture into the prepared moulds.
Baking
  1. Bake for about 20 minutes or until golden brown.
Making the Sauce
  1. Melt 50 grams of butter, 1/2 cup of brown sugar, and 300 ml of cream in a saucepan over low heat, stirring until it bubbles.
Serving
  1. Serve the warm puddings with the sauce and a generous drizzle of caramel.

Notes

These puddings are best served warm, paired with vanilla ice cream or thick cream. They can be prepped a day in advance for convenience, and various fruits can be used for customization.
