  • 2 tablespoons butter, melted Use unsalted butter for a balanced flavor.
  • 1 cup milk Can substitute with almond or oat milk.
  • 1/4 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup chopped walnuts Or use your choice of nuts.
  • 10.5 oz digestive biscuits Can use any plain biscuit.
White Chocolate Mixture
  • 6.3 oz white chocolate High quality recommended.
  • 1 tablespoon vegetable oil
  • 1/3 cup raisins
  • 1/3 cup dried cranberries

Method
 

Preparation
  1. Melt the butter in a medium saucepan over medium heat.
  2. Add milk, sugar, and cocoa powder, stirring continuously until the mixture simmers.
  3. Remove from heat and fold in the chopped walnuts.
  4. Break the digestive biscuits into small pieces and fold them into the chocolate mixture.
  5. Use a double boiler to melt the white chocolate gently and mix in the vegetable oil.
  6. Blend in the raisins and dried cranberries into the melted white chocolate.
Assembly
  1. Pour the white chocolate mixture over the biscuit mixture and fold until combined.
  2. Spoon the mixture into a prepared 9-inch square baking dish and smooth the top.
  3. Cover with plastic wrap and refrigerate for at least four hours or overnight.
Serving
  1. Cut into squares or bars and serve chilled.

Notes

Experiment with different nuts and fruits. Adding spices like cinnamon can enhance the chocolate flavor.
