  • 1/2 cup cottage cheese Use full-fat for creamier texture.
  • 1 cup rolled oats
  • 1/2 cup peanut butter Warm if stiff for easier mixing.
  • 2 tablespoons honey or maple syrup Increase for a sweeter taste.
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips Optional, for added sweetness.
  • 1/4 teaspoon cinnamon Optional, for added flavor.
  • Pinch salt Optional, enhances flavors.

Method
 

Preparation
  1. In a mixing bowl or food processor, combine cottage cheese, peanut butter, honey or maple syrup, and vanilla extract.
  2. Blend until smooth and creamy.
  3. Stir in rolled oats, cinnamon, salt, and chocolate chips (if using); mix until well incorporated.
  4. Cover the bowl and refrigerate for 20–30 minutes.
  5. Once chilled, scoop out about 1 tablespoon of dough and roll it into bite-sized balls. You should get around 12 to 15 bites.
  6. Place in an airtight container and store in the fridge for up to 5 days or freeze for up to 2 months.

Notes

Serve bites cool, optionally dusted with cinnamon. For a festive touch, press a flake of sea salt on each bite.
