- In a mixing bowl or food processor, combine cottage cheese, peanut butter, honey or maple syrup, and vanilla extract.
- Blend until smooth and creamy.
- Stir in rolled oats, cinnamon, salt, and chocolate chips (if using); mix until well incorporated.
- Cover the bowl and refrigerate for 20–30 minutes.
- Once chilled, scoop out about 1 tablespoon of dough and roll it into bite-sized balls. You should get around 12 to 15 bites.
- Place in an airtight container and store in the fridge for up to 5 days or freeze for up to 2 months.
Notes
Serve bites cool, optionally dusted with cinnamon. For a festive touch, press a flake of sea salt on each bite.
