- In a medium bowl, mash the banana until smooth.
- Stir in nut butter, honey or maple syrup, cinnamon, vanilla, and salt.
- Fold in the oats until well combined. If the mixture feels too wet, add a bit more oats.
- Stir in chocolate chips, nuts, or other mix-ins if using.
- Roll the mixture into 12 to 14 balls using your hands or a small cookie scoop for consistent sizing.
- Place the bites on a parchment-lined tray and refrigerate for 20 to 30 minutes until firm.
Notes
Keep them chilled in an airtight container for up to one week, or freeze for longer life—separated by parchment to prevent sticking. The first bite should yield a cool, tender center with a toothsome chew of oats.
