Preparation
- Blend the medjool dates and mixed nuts in a food processor until smooth, adding a tablespoon of water if needed.
- Divide the mixture into 12 pieces and press into a lined mini brownie tin or muffin tin.
Topping
- In another bowl, mix together the topping ingredients until smooth.
- Spoon the topping onto each brownie, allowing it to ooze over the edges.
- Garnish with chopped nuts or goji berries.
Setting
- Place the brownies in the refrigerator for at least an hour to set.
Notes
Store brownies in an airtight container in the fridge for up to a week. Serve chilled, optionally with coconut yogurt or fruit compote.
