Ingredients
  

Brownie Base
  • 1.5 cups soft medjool dates Use fresh, soft dates for the best texture.
  • 1.5 cups mixed unsalted nuts Walnuts, pecans, or almonds work wonderfully.
  • 0.5 cup tahini Can be substituted with almond or peanut butter.
  • 3 tbsp raw cacao powder Use for a rich chocolate flavor.
  • 3 tbsp pure maple syrup Honey or agave syrup can be used as alternatives.
  • 1 pinch sea salt Enhances flavors dramatically.
  • 4 tbsp melted coconut oil
Topping
  • 4 tbsp raw cacao powder
  • 3 tbsp pure maple syrup
  • 1 handful nuts For garnishing.
  • 1 handful goji berries Optional for color and texture.

Method
 

Preparation
  1. Blend the medjool dates and mixed nuts in a food processor until smooth, adding a tablespoon of water if needed.
  2. Divide the mixture into 12 pieces and press into a lined mini brownie tin or muffin tin.
Topping
  1. In another bowl, mix together the topping ingredients until smooth.
  2. Spoon the topping onto each brownie, allowing it to ooze over the edges.
  3. Garnish with chopped nuts or goji berries.
Setting
  1. Place the brownies in the refrigerator for at least an hour to set.

Notes

Store brownies in an airtight container in the fridge for up to a week. Serve chilled, optionally with coconut yogurt or fruit compote.
