Preparation
- Slice onions thinly using a mandolin, toss with kosher salt, and let sit for 20 minutes.
- Squeeze out excess water from the onions after 20 minutes.
- Form 1/4 pound balls of ground beef and let them rest in the fridge for 15 minutes.
Cooking
- Heat a griddle on high for about 10 minutes.
- Whisk together all burger sauce ingredients in a bowl until well blended.
- Place beef balls on the griddle, top with a handful of onions, and smash into thin patties.
- Sprinkle salt on the patties while cooking.
- Cook for about 4 minutes, flip, season again, and cook for 2 more minutes.
- Add American cheese slices on top to let them melt.
Assembly
- Cover with the bottom and top bun to trap in steam.
- Add burger sauce and pickles to the bottom bun, layer with patties, and complete with the top bun.
