Preparation
- Preheat your oven to 350°F (175°C). Grease and flour three round cake pans.
- In a large bowl, mix the butter and sugar until fluffy. Add the eggs one at a time, mixing well after each addition.
- Stir in the buttermilk, vanilla extract, and zests of the orange, lemon, and lime.
- In another bowl, mix the flour, baking powder, and salt. Gradually add this to the wet mixture and blend until smooth.
- Divide the batter into three bowls. Add yellow food coloring to one, orange to the second, and green to the third.
Baking
- Pour the yellow batter into the first cake pan, the orange into the second, and the green into the third.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick comes out clean.
- Let the cakes cool completely on wire racks.
Assembly
- Once cool, stack the cakes in order of color: yellow, orange, and green. You can use your favorite frosting to fill and cover the layers.
Notes
Serve the Ombre Citrus Cake at room temperature. You can slice it into wedges and place fresh fruit on the side for a colorful presentation. It pairs well with a scoop of vanilla ice cream or a dollop of whipped cream. Store any leftover cake in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week.
