Paris-Brest with Strawberries

Ingredients
  

For the choux pastry
  • 80 grams butter Unsalted recommended
  • 200 ml water
  • 100 grams flour All-purpose flour
  • 3 pieces eggs Large eggs
  • 1 pinch salt
  • 1 teaspoon sugar
For the filling
  • 400 ml very cold liquid cream
  • 60 grams sugar
  • 1 teaspoon vanilla extract
  • 400 grams fresh strawberries Hulled and sliced
  • 1 serving Icing sugar For dusting
  • 1 serving Mint leaves For decoration

Method
 

Preparation
  1. Preheat your oven to 200 degrees Celsius.
  2. In a pot, bring the water, butter, salt, and sugar to a gentle boil.
  3. Remove from heat and quickly add the flour, mixing until smooth.
  4. Allow the mixture to cool slightly, then add the eggs one at a time, stirring until smooth.
  5. Shape the dough into a circle on a lined baking sheet.
Baking
  1. Bake in the oven for 30 to 35 minutes until golden and puffy.
Assembly
  1. Let the pastry cool on a rack. Whip the cold cream with sugar and vanilla until stiff peaks form.
  2. Slice the cooled pastry horizontally. Spread half of the whipped cream on the bottom half and top with strawberries.
  3. Place the top half back on and add remaining whipped cream and strawberries if desired.
  4. Dust with icing sugar and garnish with mint leaves.

Notes

For best results, use the freshest strawberries. You can experiment with the whipped cream by adding lemon zest.
