Paris-Brest with Strawberries

Ingredients
  

For the choux pastry
  • 80 grams 80 grams of butter Unsalted butter works best.
  • 200 ml 200 ml of water
  • 100 grams 100 g of flour All-purpose flour recommended.
  • 3 pieces 3 eggs Room temperature eggs for better mixing.
  • 1 pinch 1 pinch of salt
  • 1 teaspoon 1 teaspoon of sugar
For the filling
  • 400 ml 400 ml of very cold liquid cream Use heavy cream for better whipping.
  • 60 grams 60 g of sugar Can adjust based on sweetness preference.
  • 1 teaspoon 1 teaspoon of vanilla extract For flavor enhancement.
For Assembly
  • 400 grams 400 g of fresh strawberries Rinsed and sliced.
  • Icing sugar to sprinkle For garnish.
  • Mint leaves for decoration Optional, for garnish.

Method
 

Preparation
  1. Preheat your oven to 200 degrees Celsius.
  2. In a saucepan, bring the water to a boil with the butter, salt, and sugar.
  3. Once bubbling, remove from heat and add the flour. Stir until the dough pulls away from the sides.
  4. Let it cool slightly before incorporating the eggs one at a time, mixing until smooth.
  5. On a baking sheet, form a circle of dough about 20 cm in diameter.
Baking
  1. Bake for 30-35 minutes until golden brown, then allow to cool on a wire rack.
Whipping Cream and Assembly
  1. While the pastry cools, whip the cold cream with sugar and vanilla until stiff peaks form.
  2. Once the Paris-Brest has cooled, cut it in half and spread a layer of whipped cream.
  3. Layer the sliced strawberries on top and replace the top half.
  4. Decorate with additional whipped cream, strawberries, icing sugar, and mint leaves.

Notes

Serve with coffee or tea for a delightful experience. For storage, keep components separately in the fridge.
