Preparation
- Preheat your oven to 200 degrees Celsius.
- In a saucepan, bring the water to a boil with the butter, salt, and sugar.
- Once bubbling, remove from heat and add the flour. Stir until the dough pulls away from the sides.
- Let it cool slightly before incorporating the eggs one at a time, mixing until smooth.
- On a baking sheet, form a circle of dough about 20 cm in diameter.
Baking
- Bake for 30-35 minutes until golden brown, then allow to cool on a wire rack.
Whipping Cream and Assembly
- While the pastry cools, whip the cold cream with sugar and vanilla until stiff peaks form.
- Once the Paris-Brest has cooled, cut it in half and spread a layer of whipped cream.
- Layer the sliced strawberries on top and replace the top half.
- Decorate with additional whipped cream, strawberries, icing sugar, and mint leaves.
