Ingredients
  

Peach Filling
  • 2 large ripe peaches, diced (about 2 cups, 12.5 ounces, or 325 grams) Use ripe peaches for best flavor.
  • 3 tbsp light brown sugar, packed (73 grams)
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp lemon juice
  • 1 and 1/2 tsp corn starch
  • 1 and 1/2 tsp water
  • 1/2 tsp vanilla extract
Crumble Base
  • 3/4 cup salted butter, melted (170 grams)
  • 1 and 1/2 cups all-purpose flour (195 grams)
  • 1 cup whole rolled oats (100 grams)
  • 3/4 cup light brown sugar, packed (165 grams)
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
Glaze
  • 1/4 cup powdered sugar (58 grams)
  • 1 tbsp water (or any type of milk)
  • 1/2 tsp vanilla extract
  • Pinch of cinnamon, to taste

Method
 

Preparation
  1. Preheat your oven to 350℉ and prepare a 9x9 pan with nonstick spray and parchment paper.
  2. In a medium saucepan, combine diced peaches, light brown sugar, lemon juice, cinnamon, and nutmeg over medium heat. Cook for about 4-6 minutes.
  3. In a small bowl, mix corn starch with water and add to the peach mixture, stirring and cooking for an additional minute, then remove from heat and add vanilla. Allow the mixture to cool.
Making the Crust
  1. In a medium bowl, melt the butter, then mix in the remaining bar ingredients, reserving one cup for topping.
  2. Press the rest into the prepared pan and bake for 10 minutes.
Assembly and Baking
  1. Spread the cooled peach filling evenly over the crust, then sprinkle the reserved crumble on top.
  2. Return to the oven and bake for 28-33 minutes until golden brown.
  3. Cool to room temperature, then refrigerate for at least 2 hours before serving.
Making the Glaze
  1. Whisk together powdered sugar, water, vanilla, and cinnamon, adjusting for consistency.
  2. Serve with whipped cream or ice cream.

Notes

Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for about a week. You can also freeze them in an airtight container for up to 3 months.
