Preparation
- Preheat your oven to 350℉ and prepare a 9x9 pan with nonstick spray and parchment paper.
- In a medium saucepan, combine diced peaches, light brown sugar, lemon juice, cinnamon, and nutmeg over medium heat. Cook for about 4-6 minutes.
- In a small bowl, mix corn starch with water and add to the peach mixture, stirring and cooking for an additional minute, then remove from heat and add vanilla. Allow the mixture to cool.
Making the Crust
- In a medium bowl, melt the butter, then mix in the remaining bar ingredients, reserving one cup for topping.
- Press the rest into the prepared pan and bake for 10 minutes.
Assembly and Baking
- Spread the cooled peach filling evenly over the crust, then sprinkle the reserved crumble on top.
- Return to the oven and bake for 28-33 minutes until golden brown.
- Cool to room temperature, then refrigerate for at least 2 hours before serving.
Making the Glaze
- Whisk together powdered sugar, water, vanilla, and cinnamon, adjusting for consistency.
- Serve with whipped cream or ice cream.
