  • 4 pieces ripe peaches, pitted and sliced Reserve a few slices for garnish and freeze the rest.
  • 2 tablespoons honey or maple syrup Adjust sweetness to your liking.
  • 1/2 cup Greek yogurt Use full-fat for creaminess or swap for dairy-free yogurt.
  • 2 cups ice cubes
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Mint leaves for garnish

Method
 

Preparation
  1. Wash, pit, and slice the peaches. Reserve a few slices for garnish and freeze the rest for at least 2 hours until firm but not completely solid.
  2. In a blender, combine the frozen peach slices, honey or maple syrup, Greek yogurt, ice cubes, lemon juice, and vanilla extract.
  3. Blend on high speed until smooth and slushy, about 1-2 minutes. If the mixture is too thick, add a splash of water or fruit juice.
Serving
  1. Pour into chilled glasses, garnish with the reserved fresh peach slices and mint leaves, and serve immediately.
  2. If not serving right away, store in the freezer and let sit at room temperature for 5-10 minutes before serving.

Notes

Serve in tall chilled glasses with a sprig of mint and a thin peach slice on the rim. Pairs well with warm biscuits or pound cake. For best texture, freeze peach slices until firm but not rock solid.
