  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1/4 cup ground flaxseed (optional) Can be omitted or replaced with chia and hemp seeds.
  • 1/4 cup chopped nuts (such as almonds, walnuts, or pecans) Toasted nuts can add flavor.
  • 1/4 cup mini chocolate chips or dried fruit (optional) Choose according to preference.
  • 1 pinch salt

Method
 

Preparation
  1. Mash the ripe bananas in a large mixing bowl until smooth.
  2. Add the peanut butter, honey or maple syrup, and vanilla extract to the mashed bananas and stir well until smooth.
  3. Incorporate the rolled oats, ground flaxseed (if using), and a pinch of salt into the wet mixture. Stir until well combined.
  4. Fold in any chopped nuts, chocolate chips, or dried fruit.
Assembly
  1. Line an 8×8-inch baking dish with parchment paper. Press the mixture evenly into the dish.
  2. Refrigerate for at least 2 hours until firm.
  3. Lift out the mixture using the parchment paper, place on a cutting board, and slice into bars.

Notes

Serve chilled or at cool room temperature to keep a gentle, sliceable firmness. Pair with coffee or tea for enhanced enjoyment. Store in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
