Preparation
- Line a 9 by 13 inch baking dish with parchment paper and set aside.
- In a mixing bowl, beat the softened butter for 1 minute until smooth.
- Add the peanut butter and vanilla; mix until smooth.
- Lower mixer speed and add the powdered sugar 1 cup at a time, mixing well after each addition.
- Spread the peanut butter mixture evenly in the prepared baking dish.
Chocolate Ganache
- In a microwave-safe bowl, add chocolate chips and oil.
- Heat for 1 minute; stir and continue mixing in 15-second intervals until smooth.
- Spread the chocolate ganache over the peanut butter layer.
Chilling
- Chill in the refrigerator for 15-20 minutes.
- Slice into 15 pieces and return to the refrigerator for an additional 1 hour and 45 minutes.
- Remove from dish and serve.
Notes
Serve chilled or at cool room temperature. Store in an airtight container in the refrigerator; can freeze for up to three months.
