  • 3 cups creamy peanut butter Choose a creamy variety for the best texture.
  • 2 teaspoons pure vanilla extract
  • 4 cups powdered sugar Add gradually to avoid a dry mixture.
Chocolate Ganache
  • 1 12-ounce package semi-sweet chocolate chips Use high-quality chocolate for a glossy finish.
  • 2 tablespoons vegetable oil Helps maintain smooth ganache.

Method
 

Preparation
  1. Line a 9 by 13 inch baking dish with parchment paper and set aside.
  2. In a mixing bowl, beat the softened butter for 1 minute until smooth.
  3. Add the peanut butter and vanilla; mix until smooth.
  4. Lower mixer speed and add the powdered sugar 1 cup at a time, mixing well after each addition.
  5. Spread the peanut butter mixture evenly in the prepared baking dish.
Chocolate Ganache
  1. In a microwave-safe bowl, add chocolate chips and oil.
  2. Heat for 1 minute; stir and continue mixing in 15-second intervals until smooth.
  3. Spread the chocolate ganache over the peanut butter layer.
Chilling
  1. Chill in the refrigerator for 15-20 minutes.
  2. Slice into 15 pieces and return to the refrigerator for an additional 1 hour and 45 minutes.
  3. Remove from dish and serve.

Notes

Serve chilled or at cool room temperature. Store in an airtight container in the refrigerator; can freeze for up to three months.
