  • 2 pieces eggs (room temperature) Ensure eggs are at room temperature for better mixing.
Dry Ingredients
  • 1.5 cups flour All-purpose flour works well.
  • 0.5 cups old-fashioned oats For the best texture.
  • 1 tablespoon baking powder Ensure freshness for proper rising.
  • 0.5 teaspoon salt Enhances flavor.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F and prepare an 8x4 inch loaf pan with nonstick spray and parchment paper.
  2. In a blender or food processor, blend together the milk, sugar, peanut butter, and eggs for 1 to 2 minutes until smooth.
  3. Add the flour, oats, baking powder, and salt, blending for another minute until well combined.
  4. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for about 1 hour and 10 minutes, or until a toothpick comes out clean.
  2. Let it cool in the pan for 10 minutes before transferring to a cooling rack. Allow to cool completely before serving.

Notes

Slices can be toasted lightly for breakfast or slathered with additional peanut butter. For storage, keep in an airtight container at room temperature for up to three days, or freeze in slices for longer storage. Consider adding chocolate chips or nuts for variations.
