Ingredients
  

Peanut Butter Filling
  • 3/4 cup peanut butter Use room temperature for better mixing
  • 1/2 cup granulated sugar
  • 1 large egg (room temperature)
Brownie Batter
  • 12 oz semi-sweet or bittersweet chocolate chips Chop uniformly for melting
  • 6 tbsp unsalted butter (cut into small cubes)
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs (room temperature)
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup cornstarch Gluten-free alternative
  • 1/2 tsp salt
  • 1 cup mini semi-sweet chocolate chips
Ganache
  • 10 oz bittersweet chocolate (chopped)
  • 1/2 cup heavy whipping cream Heat until scalding

Method
 

Preparation
  1. Preheat oven to 350°F. Lightly spray a 9-inch square baking pan with cooking spray and line with parchment paper.
  2. In a medium bowl, mix the peanut butter, sugar, and egg until well combined for the Peanut Butter Filling. Set aside.
Brownies
  1. In a large bowl, combine chocolate chips and butter. Melt in the microwave in 30-second increments, stirring in between.
  2. Stir in sugar and vanilla until combined, then add eggs one at a time, mixing between additions.
  3. In a separate bowl, whisk together cocoa powder, cornstarch, and salt. Add to the wet mixture and mix until smooth.
  4. Stir in mini chocolate chips. Pour two-thirds of brownie batter into the prepared pan.
  5. Drop spoonfuls of peanut butter mixture on top, then add remaining brownie batter. Smooth the top.
  6. Bake for 33-37 minutes, checking doneness with a toothpick.
Cool and Ganache
  1. Let cool completely on a cooling rack or in the fridge.
  2. For the Ganache, place bittersweet chocolate in a bowl. Heat whipping cream until scalding, pour over chocolate, and let sit for 5 minutes. Stir until smooth.
  3. Pour ganache over brownies and spread until smooth. Refrigerate until set.
  4. Cut into bars and serve.

Notes

Serve chilled or at room temperature. For a molten effect, warm a slice briefly in the microwave. Keeps in the fridge for up to a week or freeze for longer storage.
