Ingredients
  

Base
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted Ensure it's melted but not too hot
Filling
  • 1 cup creamy peanut butter Can substitute with crunchy peanut butter for extra texture
  • 1 cup powdered sugar
  • 0.5 teaspoons vanilla extract
Topping
  • 12 ounces semi-sweet chocolate chips Can substitute with dark or white chocolate
  • 1 tablespoon shortening
  • 1 pinch sea salt (optional) For sweet and salty contrast

Method
 

Preparation of Base
  1. Crush graham crackers into fine crumbs using a food processor or rolling pin.
  2. Melt the butter in the microwave or stovetop.
  3. Combine graham cracker crumbs and melted butter in a medium bowl.
  4. Press the mixture firmly into the bottom of an 8x8 inch square baking pan.
Chilling and Filling
  1. Refrigerate the pan for at least 30 minutes.
  2. In a large bowl, cream together peanut butter and powdered sugar until smooth.
  3. Stir in vanilla extract and adjust with milk or sugar if necessary.
  4. Spread the peanut butter filling over the chilled graham cracker base.
  5. Refrigerate again for another 30 minutes.
Chocolate Topping
  1. Melt chocolate chips and shortening together until smooth.
  2. Pour the melted chocolate evenly over the peanut butter layer.
  3. Sprinkle a pinch of sea salt on top if desired.
  4. Chill for at least an hour or until chocolate is set.
Serving
  1. Remove the bars from the pan and cut into squares.
  2. Serve chilled, preferably with a glass of cold milk or hot tea.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week.
