Method
Preparation of Base
- Crush graham crackers into fine crumbs using a food processor or rolling pin.
- Melt the butter in the microwave or stovetop.
- Combine graham cracker crumbs and melted butter in a medium bowl.
- Press the mixture firmly into the bottom of an 8x8 inch square baking pan.
Chilling and Filling
- Refrigerate the pan for at least 30 minutes.
- In a large bowl, cream together peanut butter and powdered sugar until smooth.
- Stir in vanilla extract and adjust with milk or sugar if necessary.
- Spread the peanut butter filling over the chilled graham cracker base.
- Refrigerate again for another 30 minutes.
Chocolate Topping
- Melt chocolate chips and shortening together until smooth.
- Pour the melted chocolate evenly over the peanut butter layer.
- Sprinkle a pinch of sea salt on top if desired.
- Chill for at least an hour or until chocolate is set.
Serving
- Remove the bars from the pan and cut into squares.
- Serve chilled, preferably with a glass of cold milk or hot tea.
Notes
Store leftovers in an airtight container in the refrigerator for up to a week.
