Ingredients
  

For the Peanut Butter Mixture
  • 1/2 cup creamy peanut butter Ensure it’s smooth for easy mixing
  • 3 tbsp salted butter, softened Softened for better incorporation
  • 2 tbsp granulated white sugar Adjust sweetness to taste
  • 1/2 tsp salt
  • 3/4 cup powdered sugar For a sweet dough
For Assembly
  • 72 pieces mini twist pretzels Makes approximately 36 sandwiches
For Chocolate Coating
  • 3/4 cup dark chocolate chips Use quality chocolate for best results
  • Sea salt Optional garnish for flavor contrast

Method
 

Preparation
  1. In a mixing bowl, beat together the creamy peanut butter, softened salted butter, granulated sugar, and salt until fully combined.
  2. Gradually beat in the powdered sugar until the mixture forms a soft dough.
  3. Line a large sheet pan with parchment paper.
  4. Scoop out 1 to 2 tablespoons of the peanut butter mixture, roll it into a ball, and sandwich it between two pretzels, pressing gently.
  5. Repeat until all mixture is used, resulting in about 36 pretzel sandwiches.
Chilling
  1. Freeze the assembled sandwiches for 30 minutes.
Coating
  1. Melt dark chocolate chips in the microwave in increments of 15 seconds, stirring in between, until smooth.
  2. Dip each pretzel sandwich halfway into the melted chocolate and place back on parchment paper.
  3. Optionally, sprinkle sea salt immediately after dipping.
Final Chilling
  1. Return the pretzel bites to the freezer for an additional 15 minutes to set the chocolate.
Serving
  1. Serve chilled on a white platter for an elegant presentation.

Notes

Keep pretzel bites in an airtight container in the refrigerator for up to two weeks. For longer storage, freeze until solid and transfer to a freezer-safe bag for up to three months.
