Preparation
  1. Blend the raspberries into a creamy puree.
  2. In a bowl, combine the raspberry puree with cream cheese, egg yolk, and lemon juice until smooth.
  3. Add sugar to taste, balancing the flavors.
  4. Form the mixture into small balls and roll them in cookie crumbs.
  5. Moisten your hands lightly to prevent sticking while rolling.
  6. Chill the balls in the fridge for at least an hour before serving.
