- Preheat your oven to 180 degrees Celsius.
- Combine flour, sugar, salt, cold diced butter, and egg in a bowl to create a smooth dough.
- Press the dough into a lined rectangular baking pan evenly.
- Bake for about 10-12 minutes until golden.
- Spread raspberry jam over the baked crust.
- Beat egg whites with a pinch of salt until stiff peaks form. Gradually add sugar.
- Fold in lemon juice and walnuts, then spread the meringue over the jam.
- Return to the oven at 170 degrees Celsius for 18-22 minutes until golden brown.
- Allow to cool completely before slicing into squares.

Store in an airtight container at room temperature for up to 3 days or in the fridge for longer storage. You can swap raspberry jam for other flavors like passionfruit.
