Ingredients
  

For the crust
  • 200 g flour
  • 100 g cold butter, diced
  • 50 g sugar
  • 1 unit egg
  • 1 pinch salt
For the filling
  • 250 g raspberry jam or preserve
For the meringue
  • 3 units egg whites Ensure bowl is grease-free for best results.
  • 150 g sugar Gradually sprinkle into egg whites.
  • 1 pinch salt
  • 100 g walnuts, roughly chopped Can be toasted for added flavor.
  • 1 tsp lemon juice (optional) For added stability.

Method
 

Preparation
  1. Preheat your oven to 180 degrees Celsius.
  2. Combine flour, sugar, salt, cold diced butter, and egg in a bowl to create a smooth dough.
  3. Press the dough into a lined rectangular baking pan evenly.
  4. Bake for about 10-12 minutes until golden.
  5. Spread raspberry jam over the baked crust.
  6. Beat egg whites with a pinch of salt until stiff peaks form. Gradually add sugar.
  7. Fold in lemon juice and walnuts, then spread the meringue over the jam.
  8. Return to the oven at 170 degrees Celsius for 18-22 minutes until golden brown.
  9. Allow to cool completely before slicing into squares.

Notes

Store in an airtight container at room temperature for up to 3 days or in the fridge for longer storage. You can swap raspberry jam for other flavors like passionfruit.
