Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
- Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
- Gradually mix in the dry ingredients until just combined.
- Gently fold in the chopped strawberries.
Baking
- Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart.
- Bake for 10-12 minutes or until lightly golden around the edges.
- Cool on racks before serving.
Notes
Serve warm with a dusting of powdered sugar or let cool and stack. Store in an airtight container for up to 2 days at room temperature, or in the refrigerator for up to 5 days. For freezing, place in a single layer and then in a sealed bag for up to 2 months.
